Hello readers. I am here again with a completely new and a hearty dish of the Middle East. Today we will learn how to prepare Lamb shanks with roasted Freekeh. You can also use some other kind of meat if you do not want to have lamb shanks.

The meat you have chosen is first browned and then you have to cook it in water. Use this resulting broth to cook the freekeh. If you want you can also prepare this dish without using any meat into the dish because Freekeh itself is full of all the necessary minerals like iron etc. and serve as a very good substitute for meat.

Major ingredients you need:
  • Lamb shanks or any type of meat - 1 lb
  • Chopped onion- 1 large in size
  • Freekeh - 1 cup
  • Oil - 1/4 cup
  • Black pepper, Cinnamon or any other you want specifically - ½ tablespoon
  • Almonds- ½ cup
  • Pine nuts - ½ cup

Let’s see how to prepare? (Method)
  • Wash the freekeh under tap water and then soak it for some time.
  • Take a pan. Heat oil in it. Fry onion and meat in the oil till they get brown in colour.
  • Sprinkle all your choicest spices on the meat and then dip it under 4 to 5 cups of fresh water and keep this mixture on a sim gas flame. Keep it on the sim flame for 45 minutes or keep it until the meat gets completely cooked and the meat is falling off from the bones.
  • Now remove the meat from the flame and keep it aside. Remove all the bones or any gelatinous part. Take the broth and spread it through the sieve. Press on the onions to extract the onion pulp from it as much as possible. 
  • Drain out the freekeh and heat the tablespoon of oil in the pan. Now fry the freekeh until all the grains get coated in the oil. Now pour this meat broth over the freekeh and cover the pan with a lid.
  • Keep it on low lame and let it cook for 30 minutes or a little more if you feel that the grain has not softened yet. Add a little water if required.
  • Now place freekeh on the plate and then keep the lamb pieces covering the freekeh. Add roasted nuts on the top of the lamb pieces.
